Flourless Brownies Recipe (my favorite healthy-ish dessert)

I'm about to head out on a silent meditation retreat for a few days.  I volunteer to help with the cooking and this is one of the desserts we'll be having which is one of my favorites of all time!  It's not too sweet so it works well for people who don't want too much sugar in their diet (for any number of reasons).  The sugar in the recipe is maple syrup which takes longer to absorb into the bloodstream, so it doesn't give you the sugar crash.

Flourless Brownies

  • 6 cups black beans (4 15-oz cans, drained and rinsed very well)

  • 4 Tbsp cocoa powder

  • 2 cups quick oats (gluten-free)

  • 1 tsp salt

  • 2 cups pure maple syrup or honey

  • 1 cup melted coconut oil

  • 8 tsp pure vanilla extract

  • 2 tsp baking powder

  • 4 cups dark chocolate chips

  • optional: more chips, for sprinkling on top

Instructions

Preheat oven to 350 F. Combine all ingredients except chips in a good food processor, and blend until completely smooth. Really blend well.  Stir in the chips, then pour into two greased 9x13 pans. Optional: sprinkle extra chocolate chips over the top. Bake the brownies 15-18 minutes. Important not to overbake. Underbaking will result in a fudgier brownie, so err on the side of underbaking. They will firm up more when cool.
